Baingan (Eggplant) Bharta

Today, I tried out this Indian eggplant main dish – Baingan Bharta. The fun fact about this is that I never ate this as a kid. A special number for the darling husband… he loves it!! I’m hoping so will you!
Ingredients
  • 1 big Eggplant
  • 2 med. size tomatoes
  • 1/2 cup green chopped red bell pepper
  • 1 green chili
  • 1/4  inch piece of ginger
  • Olive oil in a can
  • Pinch of asafetida
  • 1 teaspoon cumin
  • 1 teaspoon coriander powder
  • 1/2  teaspoon turmeric
  • 1/2  teaspoon red chili
  • 1 teaspoon sat adjust to tast
  • 2 tablespoon chopped cilantro to garnish

Let’s get started, shall we   :)   

 Preheat oven to 400 degrees. Bake eggplant for 45 mins.  

Allow the eggplant to cool. Peel off the skin and chop into small peices.  

Blend the tomatoes, ginger and green chili.  

Add 2-3 sprays of Olive oil in a heated pan. Stir fry the bell pepper for about a minute and set aside.  

  

In the same pan, add cumin seeds and asafetida. Add 2-3 more Olive oil sprays. The seeds will start cracking.  

Add tomato puree, coriander powder, turmeric, red chili, and salt. Let it cook for a few minutes.

Add eggplant. Let it cook on medium heat. Keep stirring and mashing the eggplant as it cooks. This is now coming together!

Cook for about 8 to 10 minutes. The eggplant looks smooth and creamy!

Add bell pepper and fresh cilantro to the eggplant and mix it gently  

  

There you go! Delish Baingan bharta with the lowest possible calories…Yummy! :)

  1. Very good and delicious lokking dish. Hope Kunal liked it. Next time roast Baingan on flames of wood or coal , like barbeque and then stuff with spices and fry in oil…Oh that may not be the process..but something like that. Check with your mom.
